Step 1
In a blender, pulse rum, pineapple juice, lime juice, and cream of coconut until smooth. Taste and add more lime juice, if desired.
Step 2
Transfer to a large wine glass. Fill glass with ice, then top off with seltzer. Garnish with a cherry and pineapple wedge (if using).
2 oz coconut rum
2 oz pineapple juice
1/4 oz fresh lime juice
2 Tbsp cream of coconut
4 oz seltzer
